I love Sarah Wilson for her ongoing quest to fill her body with the good stuff, & Amy even more for giving me the quickest & yummiest Saturday morning breakfast! Welcome to the mug muffin as Amy so affectionately calls it.
And it is literally as easy as 1 2 3 4 5!
What you’ll need…
A mug for starters! But I imagine a bowl or ramekin would do just fine too.
What:
Half or a whole banana
A sprinkle of cinnamon
1 tablespoon of almond meal
A handful of blueberries [although Amy used sultanas]
1 beaten egg
How:
Mash up the banana in your mug
Sprinkle over the cinnamon & mix
Add the almond meal & mix
Pop in the blueberries & mix
Beat the egg in a separate bowl, then add & mix
Sprinkle over some more cinnamon for good measure [I added this step]
Pop into the microwave & zap for 90 seconds et Voilà!
The verdict:
“Please sir, can I have some more?”
It’s not overly sweet – just sweet enough to give you a satisfying & good-for-you muffin breakfast!
